You’ve carved your spooky pumpkin but you don’t know what to do with it now the Halloween season is over? We’ve collected a few ways to use your left over pumpkin instead of just throwing it in the bin.
Roasted Pumpkin Seeds- Once you’ve scooped out the seeds, give them a wash and toss them in a bowl with melted butter and salt. The spread the seeds evenly on a baking tray (lined with a baking sheet) and bake for 45 minutes at 300 degrees F (150 degrees C) until they are golden brown. And you have a tasty, healthy snack.
Pumpkin Pie- Pumpkin pies aren’t just easy and delicious to make, they’re also surprisingly healthy.
Pumpkin Soup- This hearty meal is not only easy to make, but tastes amazing. Pumpkin soup is low in fat and packed with nutritional goodness. Perfect for keeping you warm this winter.
Pumpkin Curry- This one has a little more kick to it but still a hearty winter meal for you to enjoy. And what’s great about this is you can make your curry just the way you like it and just throw in your chunks of pumpkin.
Pumpkin Bread- Pumpkin bread is a great way of using up leftover pumpkin, and unlike the curry, is a lovely sweeter treat for you to enjoy.
Compost- If you’ve made all these wonderful tasty treats but still found you have pumpkin left over, don’t just throw it in the bin. Put it on a compost, giving it back to the Earth.
So many pumpkins are wasted every year and although it can be really fun to carve them and use them as decorations, it’s important to remember that we need to reduce waste as much as possible and to try and move away from our “throw-away” culture.
